The Côtes du Roussillon Rosé

The Côtes du Roussillon Rosé stems from Black Grenache and Syrah in order to obtain a strong and fruity wine best in its youth, it is a rosé of bleeding. Its soil of predilection is the same as the one of Cotes du Roussillon Villages.

It will go very well with exotic dishes, italian specialities or grilled sardines. It can also be drunk as an aperitif.

Keeping : 1 to 2 years
Tasting Temperature : 8°C to 10°C

Method of vinification : Total destemming, 6 hours maceration, bleeding, cold settling. Vinification in tanks with thermoregulation

Maturing : Stainless steel tank maturing with early bottling.

Alcohol by volume : 13% by vol.

The Côtes du Roussillon Villages

These wines stemming from Black Grenache, Syrah and Black Carignan are exclusively red, their yields must not exceed 45 hl/ha but are always lower on the Domain.

The clay limestone rocky slopes of Tautavel suit really well the Syrah’s grape variety where it can express all its character. As for the Black Grenache, it expresses itself better on the schisty marl soils. This type of soil allows the Black Grenache to bring out power and flavour. The Black Carignan completes both grape varieties.

Our blending “Tradition” was the very first red wine elaborated by the Domaine. This wine stemmed from a selection of very old vines  which give this wine power and balance.

It will be enjoyable with grilled meats, lamb and poultries dishes.

The Côtes du Roussillon Villages « TAUTAVEL »

Tautavel belongs to the 32 villages allowed to produce the Côtes du Roussillon Villages. Since 1996, Tautavel has joined the 3 other villages that are the cradle of specific productions and can add his name to the “Appelation”: Côtes du Roussillon Villages “Tautavel”.

To justify of this new “Appelation”, we have reduced the yields to 35 hl/ha and put into place a system vinifications by plots, always seeking higher quality. Our Côtes du Roussillon Villages “Tautavel” are exclusively matured in oak casks. They are wines with a strong typicity, character and an aptitude for ageing.

The Côtes du Roussillon Villages TAUTAVEL “Cistes”

This cuvee owes its name to the small bush “Cistes” with little white flowers growing at the wild state in the scrub surrounding the plots used to produce this wine. Its soil, facing South-East, is the earliest on the Domaine. It brings a candied and grilled side to this cuvee.

The “Cistes” will be a perfect match for games, red and sauced meat dishes.

This wine, stemming from a very sloping plot of 3 ha with a clay limestone soil facing North-West, comes from the latest soil on the Domaine. This soil endows the wine with a lot of character, a good concentration but also delicacy and a good freshness. It is our most prestigious blend.
This wine will be best tasted with games, red and sauced meat dishes.

Keeping: 10 years
Tasting temperature: 15° C to 19° C

The Natural Sweet Wines

Since the XIIIth century, the Natural Sweet Wines are developed by adding wine alcohol to the grape juice during fermentation. Thanks to this ingenious process discovered by Arnau de Vilanova, these generous wines stemmming from Grenache Noir (Black Grenache), Grenache Blanc (White Grenache) and Muscat à petits grains for the wines of the Domaine, preserve a part of the natural sweetness of the fruit.

The Rivesaltes Ambré

This golden colored wine with nuts, dry apricots and candied orange peel scents is exclusively made from White Grenache.

It can be savoured as much as an aperitif or an accompaniment for foie gras, ewe cheese or desserts. It will also be really enjoyable with apricot salads or with a crème brûlée.

Tasting Temperature: 10° C to 12° C

The Muscat de Rivesaltes

This wine is exclusively made with Muscat à petits grains which gives it blossom, ripe fruits, citrus and exotic fruits aromas.

It will be appreciated as an aperitif or will ideally highlight your fruit based desserts, dry goat cheese and Roquefort.

The Maury

This deep red wine with macerated fruits, cocoa and roasting flavours is exclusively made from Black Grenache Noir.

It distinguishes itself as a perfect match for chocolate lovers. You may also serve Maury with red fruit desert or as aperitif.
